White Chocolate and Blueberry Muffins

What’s not to love about a chocolate muffin warm and straight out the oven? Especially when they’re this easy and take less than 45 minutes!


Time to make: 45 mins (including cooking and washing up)
Cost (in ASDA):  £9.88 for whole dish/£0.82 per serving (you may already have lots of the ingredients in you cupboard)

The original recipe was for raspberries, so the blueberries can easily be switched out for another fruit. Make sure not to cook for too long as you want the muffins to stay light and airy!

  • Utensils you’ll need:

12-hole muffin tin
Spoon
Scales
Sift
Teaspoon
Measuring jug
Mixing spoon
Small bowl

  • Ingredients:

300g Plain flour
2 tsp Baking powder
150g Golden caster sugar
1 Large egg
1 tsp Vanilla extract
225ml Milk
50g Unsalted butter (melted)
100g Fresh blueberries
100g White chocolate chips
12 Muffin cases

  • Recipe:
  1. Preheat the oven to 180 C and line a 12-hole muffin tin with cases
  2. Sift the flour and baking powder into a bowl and stir in the sugar
  3. Crack the egg into a separate bowl and whisk in the vanilla extract, milk and butter
  4. Stir in the wet ingredients into the dry and add the blueberries and chocolate, take care not to over mix
  5. Spoon the mixture into the cases and bake for 25-30 minutes and bake until well risen and just firm to the touch
