Can I just say how much I love being a girl mom?

The obsession with all things mermaid, unicorn, princess and fancy is right up my alley. I mean, I love my football and superheroes, but thankfully this girl embraces them, too.

I love that I can embrace all of these girly delights in the kitchen and have a little person around who is just as giddy as me at the sight of this unicorn skillet cookie. She thought it was so exciting and couldn’t wait to dig in!

Skillet Cookies are such a fun option for special occasions, especially if you have guests or family members who aren’t big fans of cake. You still get all of the frosting, pretty presentation and experience of cutting into the cookie-cake, but instead of a fluffy cake, you get a tender, delicious sugar cookie with a sweet vanilla glaze and luscious vanilla buttercream frosting.

Definitely the best of both worlds!

Can I use mini skillets to make a skillet cookie? Absolutely, this recipe can be divided into smaller skillets, or you can reduce the recipe to fit into a smaller pan. The bake time will be less, depending on your skillet size.

What does this skillet cookie taste like? Like the best sugar cookie you’ve ever tasted! I add a touch of almond extract to my sugar cookies (it’s my not-so-secret ingredient) and it really helps with a depth of flavor and helps bring out the subtleties of the vanilla extract. Almond extract tastes nothing like bitter almonds – it’s sweet and almost cherry-like.

You can also or alternatively add butter extract if you want a bigger cake flavor.

Can I freeze this skillet cookie? You can freeze the dough for this cookie recipe for up to two months in an airtight freezer bag or freezer containers. I do not recommend freezing the baked cookie. (This set of freezer containers is a crazy bargain.)

Tip: swap out the colors for different themes. You can alternatively skip the food dye in the cookie dough and just use extra sprinkles.

How to Make a Unicorn Skillet Cookie

Preheat oven to 350ºF

Grease an iron skillet and set aside.

Stir together the flour, baking powder, baking soda and cornstarch in a small bowl. Set aside.

Using a mixer, combine the butter and sugar together until light and fluffy, about 2 minutes.

Add the egg, egg yolk and vanilla to the sugar-butter mixture and combine fully.

Add in the dry ingredients and mix until thoroughly combined.

Divide the dough into 4 equal balls and dye each with the food dye – one pink, one purple, one blue and one orange.

Either randomly add bits of dough all over the skillet or press down in layers.

Press down the top of the cookie dough to ensure an even layer.

Bake for 25-30 minutes until lightly golden on top.

Remove from oven and let cool as you prepare the glaze and frosting.

Combine the glaze ingredients and pour over the cookie. Generously add sprinkles.

In a medium-sized bowl, combine the butter, icing sugar and vanilla together for 1 minute until smooth, then add 1 Tablespoon milk and mix for 30 seconds. Adjust texture as needed with additional sugar or milk.

Divide into two bowls and dye one bowl pink and the second blue.

Scoop each frosting into a piping bag fit with a star tip.

Make dollops of frosting along the edge of the cookie, making short 2″ swirls and pulling the piping bag back firmly. Using two piping bags makes this easier.

A delicious, tender and not-too-sweet sugar cookie cake topped with sweet vanilla glaze and vanilla buttercream frosting. Perfect for special occasions when guests aren't big fans of traditional cakes.

Ingredients

For the Cookie Dough:

  • 1 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoon cornstarch
  • 1/2 cup butter, softened
  • 1 cup white sugar
  • 1 egg
  • 1 egg yolk
  • 1 Tablespoon vanilla
  • 1 teaspoon almond extract
  • Orange, pink, purple and blue food dye

For the vanilla glaze:

  • 1/2 cup powdered icing sugar
  • 2 Tablespoons milk
  • 1/2 teaspoon vanilla extract
  • Silver sprinkles (or any color)

For the frosting:

  • 1/2 cup butter, softened
  • 2 cups powdered icing sugar
  • 1 teaspoon vanilla extract
  • 1-2 Tablespoons milk
  • Blue and pink food dye

Instructions
