Recipe: Blueberry Lemon French Toast Casserole

As promised here is the recipe for the Blueberry Lemon French Toast Casserole recently featured here on the blog!

You can make this as big or small as you want! The picture above is enough to feed 8-10 people whilst this recipe is for 4-6 people.

Ingredients:

  • 4 Bread Rolls (I like the cheap grocery store made ones!)
  • 3/4 cup of Maple Syrup
  • 2 Lemons (zest and juice)
  • 2 packages of Blueberries
  • 4 Eggs
  • 1/2 cup of Milk
  • 1 tbsp Cinnamon
  • 1 tbsp Nutmeg

Preheat the oven to 350 degrees.

Step One: Tear up the bread and put it in a nice glass pan.

Step Two: Add half of the lemon zest and half of one blueberry container to the bread.

Step Three: Pour the maple syrup and the remaining blueberries, lemon zest and juice to a small pot and heat that bish up.

Step Four: Mix the eggs, milk, cinnamon and nutmeg in a bowl.

Step Five: Once the blueberries start to burst and reduce down remove the blueberry syrup mixture from the heat.

Step Six: Pour the egg mixture over the bread and make sure every piece of bread is covered in the mixture.

Step Seven: Pour the blueberry mixture over everything. Stir it all up.

Step Eight: Cover it with foil and put in the oven. After 25 minutes take the foil off and let the casserole cook for another 15 minutes.

Step Nine: Enjoy!
