This baked breakfast is filling, low carb and high protein. It’s also an easy way to add more vegetables to your breakfast.

Instead of the usual slice of bread with a hole cut out for a fried egg, a slice of fresh bell pepper makes for a great replacement. It’s hearty, wholesome, and sure to become a new favorite breakfast routine.

Start by preheating the oven to 375 degrees F.

Slice 1 bell pepper into rings.  (Depending on how thick or thin you slice, you should get 5-6 rings).

Place the rings on a prepared baking sheet.

Place a frozen sausage pattie in the middle of each pepper ring. I used veggie sausage, but feel free to use what you and your family prefer.

Next, carefully, crack an egg on top of each sausage. Top with a dash of salt & pepper.

Bake for approximately 20-25 minutes. Remove and top with fresh cilantro and hot sauce.

Ingredients

  • 1 bell pepper (Preferred color)
  • 5-6 frozen breakfast sausages
  • 5-6 eggs
  • Salt & Pepper to taste
  • Optional garnish: 2 Tbsp fresh cilantro & Preferred hot sauce

Instructions
