For the bread you’ll need the following:

  • 2 eggs
  • 5.3 ounces Oikos® OH! Lemon Sweet Cream Delight
  • 1/3 cup + 2 tablespoons oil
  • 1 teaspoon vanilla
  • ½ cup lemon juice
  • zest from 1 lemon
  • 1 ¾ cup flour
  • 1 cup sugar
  • 3 tablespoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 3 teaspoon poppy seeds

For the glaze you’ll need:

  • 2 tablespoons melted butter
  • 2 tablespoons Oikos® OH! Lemon Sweet Cream Delight
  • zest from ½ lemon
  • 1-2 tablespoons lemon juice
  • 1 ¼ cup powdered sugar

How to Make Lemon Poppy Seed Bread

STEP ONE: In a large bowl, add the eggs and beat on high for 60-90 seconds until they are foamy.

STEP TWO: Add the yogurt, vanilla and oil, then mix until smooth.

STEP THREE: Add the zest and lemon juice, and mix.

STEP FOUR: Sift together the dry ingredients (minus the poppy seeds).

STEP FIVE: Add to the wet ingredients, and mix until combined. Stir in poppy seeds.

STEP SIX: Pour into a loaf pan, and bake at 350 for 40-50 minutes.
