This may sound funny but I assume most experienced food bloggers are like me. We are our own toughest critics. It takes a really amazing recipe to get us to react. This GF Skillet Apple Cake with Caramel Frosting is amazing. I made it for my parents. Everyone was raving over the dessert. And I am the only one who is gluten free.

GF Skillet Apple Cake

I have written about this before but the key to hosting a good dinner is choosing the foods your company enjoys most. My mom is the dessert person. She would live on dessert if you could. My dad likes fruit desserts, nothing to sweet. I got to say that it is not hard to understanding why this dessert is so tasty can you say BUTTER. The apples are sauted and softened in butter. The frosting has butter. Delicious!

I should note that I made this dessert to test it out for a THANKSGIVING RECIPES. I have had a lot of success with gluten free desserts. Butter and sugar make all things better. One dessert we really enjoyed was this GLUTEN FREE BLUEBERRY CHEESECAKE. This dessert was more cake than cheesecake. Given that it is fall, it is a perfect time for these GF PUMPKIN BROWNIES. Another delicious seasonal dessert was these GF PEPPERMINT FROSTED CHOCOLATE CAKE. One final dessert that was truly decadent was this CHOCOLATE CAKE WITH CREAM CHEESE FROSTING.

GF Apple Skillet Cake

If you need a gluten free dessert for your Thanksgiving Dinner I have happened on to a real winner from the New York TImes with this GF Skillet Apple Cake.

Caramel Apples

  • 4 Tbsp Unsalted butter
  • 2 Whole Large apples
  • 1/2 Cup Dark brown sugar
  • 1/4 Tsp Sea salt

Cake

  • 1/2 Cup Unsalted butter
  • 1 1/3 Cups Dark brown sugar
  • 3 Large Eggs
  • 1 1/2 Tsp Vanilla extract
  • 1 2/3 Cup Gluten free all-purpose flour
  • 3/4 Tsp Baking powder
  • 1/2 Tsp Sea salt
  • 1/2 Tsp Ground Cinnamon

Caramel Frosting

  • 3/4 Cup Unsalted butter (room temperature)
  • 3 Cups Confectioner sugar
  • 7 Ounces Soft caramel candies
  • 2 Tbsp Heavy cream
  • 1 1/2 Tsp Vanilla extract

Caramel Apples

  1. In a saute pan, melt the butter on medium heat. Add the apples, brown sugar, and salt. Mix well and cook down for 6 8 minutes. Stir often you want the sugar to dissolve and the apples to soften. Let cool and set aside.

Cake

  1. In an electric mixer, cream the butter and sugar. Beat until light and fluffy 4 5 minutes. Next, add the eggs one at a time beating after adding each one. Finish by adding all the eggs and you will probably need to scrape the sides as you go.

    Separately, combine the flour, baking powder, salt and cinnamon in a bowl. Now, add the dry ingredients to the cream butter and sugar mixing well. Finish making the cake by pouring in the apples with all its liquid into the batter. Mix until just incorporated.

    Pour the batter into a prepared skillet making sure it is evenly distributed. Bake in a 350 degree oven until the top is golden brown 30 35 minutes. Let cool completely.

Caramel Frosting

  1. In the electric mixer cream the butter and confectioners sugar until light and fluffy 4 5 minutes.

    Meanwhile, in a microwaveable dish, melt the caramels in the microwave on 15 20 second bursts. They burn real easy so cook slowly. They do not take long to melt. They also cool quickly and harden. So let rest for a few seconds, and then, add to the frosting and mix well. Finish by adding the cream and vanilla and mix.

    The last step is to add the frosting on top of the cooled cake. You can garnish with sea salt if you like.

    Serve and enjoy!
