Chunky Monkey Waffles

We all know that fun flavor of ice cream ‘chunk monkey’. It’s been one of my favorite of Ben & Jerry’s ever since I knew of it’s existence. It’s certainly not common to come across a banana ice cream, but let me just say, it’s so so good. Something about the banana and the chocolate chunks and pieces of walnut are amazing.

Sometimes I like to pair those three things together in other dessert or breakfast dishes to get that same trio of deliciousness. These Chunky Monkey Waffles are super easy to make with a power protein mix and then of course the chunk monkey add ins of banana, chocolate, and nuts!

My waffle iron makes big giant Belgian style waffles and I just love it. This recipe will give me exactly ONE very large Belgian waffle of which there is no possible way that I could eat the whole thing. Which is why we’re saying this is actually two servings of waffle goodness.

I topped mine off with a bourbon maple syrup, banana, a pat of butter and of course some more chopped walnuts. But! A drizzle of chocolate sauce or even some more chocolate chips would have been good too!

Ingredients

  • 1 C. Whole Grain Waffle Mix
  • 3/4 C. Water
  • 1/2 Banana, Mashed
  • 2 Tbsp. Chopped Walnuts
  • 2 Tbsp. Dark Chocolate Chips
  • 1 Tbsp. Oil

Instructions

  1. Pre-heat your waffle iron.
  2. Place all ingredients in a medium bowl and mix together.
  3. Pour the batter into the preheated waffle iron, close, and cook accordingly to your waffle iron. (Mine takes this whole bowl of batter and cooks for 3 minutes.)
  4. Once done, remove from the waffle maker and enjoy right away with your choice of toppings.

I used Kodiak Cakes Whole Grain Buttermilk Power Cakes mix.
