Beautiful Blueberry Compote

Beautiful Blueberry Compote

This is the easiest thing to make, I’m not sure if it even counts as a recipe it’s so simple. The compote goes with everything – yoghurt, ice cream, pancakes, cakes. There are two ingredients – blueberries and honey and it only takes ten minutes to cook with about 30 seconds of preparation time. Once you’ve tried it, you’ll want to have a stash of blueberries in your freezer at all times!

Beautiful Blueberry Compote

Preparation Time: 10 minutes

Serves: 600mls

Equipment Needed: Saucepan

600g frozen blueberries

2 tbsp honey

Put 300g blueberries in a saucepan, add the honey on top.

Heat the blueberries and stir until the honey melts. The blueberries will begin to thaw and release their juices and create a delicious blueberry liquid.

After 5-7 minutes, when a lot of the blueberries have broken down and there is a lot of juice, add the remaining 300g frozen blueberries.

Stir to combine, for 1-2 minutes to gently thaw the berries, but do not allow them to break down.

The compote should be an equal combination of whole berries and berry juice.

Equal parts berries and juice

The compote will keep for a week in the fridge. It is delicious added to yoghurt or makes a nice topping for scones or cooked into a bread and butter pudding.

You can print the recipe here. Let me know if you make it!!
